I’m back here sharing our meal plan after a week-long hiatus. Thanksgiving week just got TOO CRAZY. We kind of had a meal plan, but it didn’t always work out. What that means is that I think we took 20 trips to the store in one week. I’m hoping we can avoid that this week…

taco salad
This is a signature dish from one of my aunt’s. Her version uses ground beef, Doritos, shredded lettuce, tomatoes, peppers, onions, and Catalina dressing. Our allergy-friendly version subs Xochitl tortilla chips for the Doritos and Organicville French dressing for the Catalina. I’m working on adding an ollergy recipe for our allergy-friendly version.

butternut squash soup
This is a recipe a friend share that we are still working on perfecting. Once we have allergy-friendly and just how we like it, I’m definitely going to share it! It uses butternut squash and pumpkin as the base, though I’ve actually been using sweet potato instead.

maple mustard sheet pan dinner
This will be our third time having this meal from Healthy Seasonal. It was a huge hit with all of us, even though Erik and Ollie don’t usually like mustard. This week we’re going back to chicken sausage and will stick with just apples and potatoes on the pan.
tuesday
roasted chicken and vegetables
An easy way to use up veggies mid-week. I think we will roast sweet potato, green pepper, and broccoli. The chicken will probably be cooked on the stove top with some oil and a bit of seasoning. Ollie can cover everything in ketchup and perhaps Erik and I will just eat plain.
wednesday
salsa chicken
This one could not be easier! Place chicken breasts or thighs in the crock pot with about 1/2 jar of salsa and cook on low for 6-8 hours. If you want less spice, you can also use chicken broth and some taco seasoning instead. Shred the chicken right before serving and enjoy! We will use it for tacos.

quesadillas
Quesadillas are the perfect way to use up the leftover salsa chicken. We use Veggie on a Penny’s vegan cheese sauce along with kidney beans and sometimes sauteed veggies as the filling. Dip in guacamole and you have a healthy, easy, delicious meal!

eat out
We are headed downtown to see the lights and then to a hockey game. We may eat a Chipotle or we may eat elsewhere and pack a meal for Ollie. TBD. Either way, won’t be cooking for everyone at home!
