We have another crazy week ahead of us. That’s kind of par for the course these days, but this is even more than the usual. My husband is pulling a number of extra hours for a work project and preschool is only a week away. I’m trying to pretend I’m not a total mess. We’ve put lots of work into making him safe and included and are so fortunate to have an amazing team, but I’m still beyond anxious.
All of that aside, meal wise, we’re still working on bringing more vegetables into the mix. That and easy. Those two things guided this week.
saturday:
chipotle/subway
We planned on making an amazing sounding sweet potato skillet but we were out far later than expected as Ollie biked like a champ and we made it to my Memere’s house. We stopped at City Market for some snacks and easily could have grabbed dinner supplies there but figured we should reward the little man with his favorite (only) meal out.
sunday:
dinner at my parents’ house
My mom made grilled chicken and roasted veggies. Always a hit!
monday:
crockpot chicken tortilla soup
This is kind of a fridge clean out meal. We have some homemade chicken broth to use, along with pico and peppers from our garden. All the makings of a great soup!
tuesday:
meatloaf and mashed potatoes
We also did a bit of a fridge clean out with this. Instead of using all meat, we used some grilled zucchini and other leftover veggies. And if you’re in our family, you love mashed potatoes. Ollie inherited the strong potato love from his parents.
wednesday:
ground turkey tacos
We love tacos in this house. We love anything Mexican. It took me a while to accept all of it without cheese, but it’s still quite delicious.
thursday:
chicken salad stuffed peppers
This is inspired by a recipe from Everyday Allergen Free. Amanda shared tuna stuffed pepper recipe. It’s a creative and delicious way to get more vegetables.
friday:
fire dinner!
Ollie has been asking to have a roasted marshmallow for like a week. We’ll end the last week of summer with roasted hot dogs for dinner and marshmallows for dessert just the three of us. It’s OK to go light on the veggies every once in a while right?!
