Ingredients
  • 1 1/2cups milkwe use tempt coconut hemp milk
  • 1/2cup oilwe’ve used olive or coconut oil
  • 2medium bananas
  • 4teaspoons vanilla
  • 12oz spinach
  • 3/4cup apple sauce
  • 3/4cup coconut sugara lower glycemic index than regular sugar
  • 4 cups flour
  • 6teaspoons baking powder
  • 1teaspoon baking soda
  • 1teaspoon cinnamon
  • 1teaspoon salt
Instructions
  1. Preheat oven to 375 degrees.
  2. Pour milk, oil, applesauce, and vanilla into your blender. Add the 2 bananas and as much spinach as you can fit. Usually, for me, it works in two rounds of blending. Blend and add spinach until all 12 oz are blended in.
  3. I’m going to be honest, for me this next step is based mainly on laziness and ease. I add all the dry ingredients to our Vitamix blender. Usually, it takes two rounds of blending to get everything in. Conversely, you can mix the dry ingredients and then mix in the wet ingredients from the blender.
  4. Pour into silicone muffin liners or coat a regular muffin tin with coconut oil.
  5. Bake for 15-20 minutes.
  6. Enjoy! And watch your child happily eat tons of spinach.
